



It’s peak citrus season and my local grocery store is featuring different types of citrus, so I wanted to make a salsa that would celebrate that sweet and sour!
Recipe:
Roma tomatoes
Onion
Garlic
Serranos (although habaneros would be amazing)
Cilantro
Orange (I used a Moro)
Boil tomatoes, onion, serranos, and garlic. Blend up with orange (cut into chunks for easier processing). I zested some of the orange peel but made a mistake with adding too much. My salsa has a slight bitter aftertaste that I tried to mitigate with sugar. Going forward, go very light on the citrus zest, tasting as you go.

My favorite carne asada marinade has OJ in it, this would probably slap on that. Looks good!

Are you boiling the tomatoes to take the skin off or are you leaving it on?
