Chicken Skin Butter with Scallops | Butter Basics | E1

INGREDIENTS

Chicken Skin:
-4 chicken breasts (for skin)
-Salt (to taste)
-Olive oil (for seasoning)

Confit Garlic:
-10 garlic cloves
-Pinch of salt
-2 teaspoons of quality olive oil
-A small splash of water

Chicken Skin Garlic Butter:
-Softened butter (quantity as needed)
-Crispy chicken skin (from the cooked chicken skin)
-Confit garlic (from the confit garlic step)
-Fresh thyme (to taste)
-Pinch black pepper (no salt because the butter is already salted)
-Lemon zest (optional, for extra flavour)

Scallops:
-9 scallops
-Salt (to taste)
-Pepper (to taste)
-Olive oil (for searing)
-Chicken Skin Garlic Butter (from previous step)
