8 years sober but I *love* pico juice!! I’ll make a [huge batch](https://i.imgur.com/hASV95V.jpeg) and then as it gets toward the end, a few days of aging in the fridge, like the tomatoes and onions work together and take on a new flavor and then the lime starts to do this funky dance, I’ll tip the container to one corner and take a big swig!

If you wait a few days and there is not too much salt and lime juice, you get a little fermentation that adds to a different flavor.
