Prime Rib Chili Recipe With Leftover Prime Rib Roast



Leftover prime rib after your holiday dinner? Make this hearty prime rib chili recipe.

How to Make Prime Rib Chili
2 cups Omaha Steaks Prime Rib meat, cubed, excess fat trimmed
1 tablespoon fat from leftover Omaha Steaks prime rib fat cap
1 sweet onion, diced
1 jalapeño, diced
2 cloves garlic, minced
1 Prime Rib Bone
2 – 15.5 oz. cans kidney beans
1 – 14.5 oz. can diced tomatoes
8 ounces Guinness beer
1 tablespoon Worcestershire sauce
2 cups beef broth
1 teaspoon salt
½ teaspoon pepper
2 tablespoons chili powder
2 bay leaves

Directions
1. Cut off a knob of fat from the fat cap from the leftover prime rib. Dice it into pieces and add it to the soup pot to render.
2. Add the diced onions and cook until softened.
3. Add the diced jalapeño and sauté for 2 minutes.
4. Then, add the garlic and sauté for another minute.
5. Add the bone from the leftover prime rib to the pot. Then add the beans, tomatoes, beer, broth, spices, Worcestershire sauce, and the bay leaves.
6. Bring to a boil and then reduce to a simmer and cook for at least 1 hour.
7.Add the diced prime rib meat and simmer for 3-5 minutes until the meat is heated through.
8. Serve with cheese, sour cream, green onions, and crusty bread.
