I admit it, I am influenced. This recipe uses ingredients that we’ve all used hundreds of times



1 Ib of ground beef (you can use chicken or turkey as well)
1 cup of shredded cheddar for the pockets
2 tbls oil
1 onion, chopped
1 red pepper, chopped
1 jalapeño, chopped
2 cloves garlic, chopped
1 chipotle pepper in adobo, chopped
1/4 cup tomato paste
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp smoked paprika powder
1/2 tsp chili powder
1 tsp cumin powder
1 cup water

Garlic butter:
4 tbls butter melted
2 cloves chopped garlic
2 tbls chopped parsley
Pinch of salt
Mix to combine.

To assemble:
3 large tortillas, cut in half
butter
1 cup Monterey Jack cheese, shredded
1 cup cheddar cheese, shredded

In a skillet, heat oil and add the onions, garlic, pepper and jalapeño and cook for 3-4 minutes until just beginning to soften. Add the beef and cook until no pink remains. Add the tomato paste and cook for 5 minutes as it starts to caramelize. Add the chipotle pepper, all the seasonings and the water and cook for about 10 minutes or until most of the water is evaporated. Remove from heat. (This could be made a day or 2 in advance)

Preheat oven to 400F.
Cut the tortillas in half. (Watch the video to get a better idea of how I fill them). Place some beef mixture and some cheese in the middle of each tortilla half
and fold and and seal the tortilla to form a triangle, then set it aside. Repeat with the remaining tortillas until all are filled with cheese and beef.

Brush some of the garlic butter on the bottom of a round casserole dish (I used a 10” cast iron skillet)

Arrange the bundles in the dish seam side down. Brush the tops with more butter, then sprinkle with mozzarella and cheddar cheese. Bake for 20 minutes, or until the cheese is fully melted and bubbly. Serve with pico or salsa or guacamole or naked

    I make mine with sloppy Joe meat & I shape mine into a crescent moon or quesdilla. I serve with lettuce, salsa & crema (sour cream). No social media required!

  10. For that woman to claim she isn't influenced is an absolute lie. Maybe she means she doesn't follow other people's content as much, but in order for her to capitalize on trends then she's definitely seeing what is trendy from others. Also, the more self-aware you are, the more you will realize how many of your own thoughts are simply reactions to other things in your environment.
