Creating a less hotter jalapeño was terrible idea. A jalapeño is suppose to be hot. Now you go to the market and they have no heat and difficult to make a hot salsa. The jalapeño should have been left alone. Not any thing to be proud of.

This is why Sriracha has the perfect level of heat. Let the jalapeno ripen until it's red, mixed with garlic and sugar and it's perfect.
I prefer the flavor of a Serrano pepper. They’re a bit warmer than a jalapeño, so you can use less and get the same heat and the best flavor! 😋
