RECIPE –
In a pan, heat oil and add crushed coriander seeds, fennel seeds, and cumin seeds. Sauté until aromatic. Add chopped green chili and ginger, then add mashed boiled potatoes. Mix in turmeric, red chili powder, coriander powder, black pepper, garam masala, and salt. Add chopped coriander leaves and mix well. Let it cool.
For the dough, mix maida, ajwain, kala jeera, and oil. Add water gradually and knead into a stiff dough. Rest for 15 minutes.
