*🧈 Street Style Pav Bhaji Recipe*
*🥔 Ingredients*
**For Boiling Vegetables**
* 2 potatoes (aloo)
* 1 cup cauliflower (gobhi)
* ½ cup beans
* 1 small bottle gourd (ghiya/lauki)
* 1 carrot (gajar)
* ½ small beetroot (chukander)
* ½ cup green peas (matar)
* ½ tsp salt
* 1 tsp coriander powder
* ½ tsp turmeric powder
* 1–2 cups water
**For Special Street-Style Paste**
* 6–8 garlic cloves
* 1 inch ginger
* 4–5 dried red chilies
* 2–3 green chilies
**For Bhaji (Gravy)**
* 2 tbsp butter
* 1 tbsp ghee
* 1 onion (finely chopped)
* ½ cup green peas
* 1 capsicum (shimla mirch, finely chopped)
* 2 tomatoes (finely chopped)
* Salt to taste
* ½ tsp turmeric powder
* 1 tsp red chili powder
* 1 tsp coriander powder
* ½ tsp garam masala
* 1–2 tbsp pav bhaji masala
**For Serving**
* 6–8 pav (bread rolls)
* Butter (for toasting)
* 1 onion (roughly finely chopped)
* 1 lemon
*🍲 Method*
*1. Boil the Vegetables*
1. Chop all the mixed vegetables.
2. Add them to a pressure cooker.
3. Add salt, coriander powder, turmeric powder, and water.
4. Cook for **3–4 whistles** until the vegetables are soft.
*2. Prepare the Paste*
Grind together:
* Garlic
* Ginger
* Dried red chilies
* Green chilies
Make a smooth paste.
*3. Cook the Bhaji*
1. Heat a **kadhai (pan)** and add butter and ghee.
2. Add the prepared paste and cook for **a few seconds**.
3. Add finely chopped onion and sauté until slightly golden.
4. Add green peas and chopped capsicum.
5. Add finely chopped tomatoes.
6. Add spices: salt, turmeric, red chili powder, coriander powder, and garam masala.
7. Cook the masala for **3–4 seconds**.
*4. Add Vegetables*
1. Mash the boiled vegetables.
2. Add them to the pan and mix well.
3. Add **1–2 tablespoons pav bhaji masala**.
4. Cook the bhaji for **5–7 minutes**, stirring occasionally.
Your **bhaji is ready**.
*🥖 Toast the Pav*
1. Cut the pav into two halves.
2. Heat a **tawa** and add a little butter.
3. Add a little bhaji on the tawa (optional for street style).
4. Toast the pav on both sides until golden.
*You can also simply toast pav with butter* .
*🧅 Salad (Onion Garnish)*
* Roughly finely chop an onion.
* Wash it and squeeze fresh **lemon juice** over it.
✅ Serve **hot pav bhaji** with butter, chopped onion, and lemon.
