This is a traditional Chinese rural masterpiece: Xiangcun Yanla Yu (腌辣鱼). After packing fresh fish and fiery red chilies into the jar, we use rich yellow clay to seal the mouth blindly. 🪨 It takes months of slow fermentation in the dark. mud turns into flavor alchemy, locking in the heat and creating an earthy, umami taste you won’t believe.
