This is the easiest stovetop Chicken and Rice recipe!
Cook chicken and rice together for tender, juicy chicken and flavorful rice. Use 3 lbs of seasoned chicken thighs (lemon pepper works great). Brown chicken, then remove. SautƩ 1 chopped onion and 2 cups of rice in drippings, scraping up brown bits. Add 3 cups of water, reserved seasoning, and 1 tbsp bouillon. Bring to a boil, nestle the chicken back in, cover, and simmer on low for 25 mins. Let rest 10-15 mins before serving. The chicken juices make the rice rich and delicious!

Iād recommend using Better Than Bullion products. Theyāre more flavorful than stock in a box or the powder type. Very economical as it keeps in the fridge for a long time.
Iād have added a cut of fresh green beans or broccoli florets when put the chicken back in the rice. Yummy!

This looks super delicious!!! I've started buying chicken thighs more than breast as I think it's more tasty. I've also just bought a rice cooker today off amazon. I'm not very confident cooking rice from scratch as I never seem to time it right š®
This might be a very stupid question to ask, if I cook the chicken thighs as you mentioned in a pan, along with cooking some onions, could I in theory transfer the chicken, onions, rice and water/stock into the rice cooker to cook it all together? Xxx

Made this and it turned out fantastic. Iām not good with onions so I substituted some celery and some chives
One of my favorite dinners! I like to dice a carrot and throw it in at the same time as the onion. Makes it sweeter and a little more colorful!
