Ingredients (4–5 servings | 20 mins)
For Stuffed Mirch:
• 10–12 large red/green mirch (bhavnagri or thick variety – slit lengthwise, deseeded)
• 150g paneer (crumbled)
• ½ cup grated cheese (mozzarella/cheddar mix)
• 1 tsp aachari masala (or mix of fennel, mustard, nigella seeds)
• ½ tsp red chilli powder
• ½ tsp garam masala
• ½ tsp amchur powder
• Salt to taste
• 1 tbsp coriander leaves (chopped)

For Batter:
• ½ cup corn flour
• ¼ cup rice flour
• ½ tsp red chilli powder
• ½ tsp turmeric
• Salt to taste
• Water (medium-thick slurry)
• Oil for deep frying
Method in 3 lines:

Mix crumbled paneer + cheese + aachari masala + spices + salt → stuff into slit mirch.
Prepare batter: mix corn flour + rice flour + spices + salt + water → dip stuffed mirch well.
Heat oil → deep fry on medium flame till golden & crispy → drain & serve hot with chutney or sauce!
