##INGREDIENTS
* 9 vine-ripened tomatoes
* 1 large white onion
5 habanero peppers
* 4 serrano peppers
3 jalapeños
* 2 red bell peppers
* 1 Anaheim pepper
* 60 ml lime juice
* 1 tablespoon kosher salt
* Cilantro to taste
* Garlic to taste
#METHOD
1. Preheat broiler
Turn broiler on to preheat
2. Prepare vegetables
Wash all vegetables
Remove tomato stem ends
For all peppers except serranos, remove tops, halve, and remove seeds and membranes
3. Arrange for roasting
Place tomatoes, onion, and garlic in a 12-inch cast iron skillet with tomatoes stem side up
Place all peppers in a 15-inch cast iron skillet with peppers skin side up
4. Broil
Broil peppers for 15 minutes
Broil tomatoes and onion for 30 minutes or until blackened on top
5. First blend
Add lime juice, salt, cilantro, and peppers to food processor
Blend until fully liquefied and emulsified
Pour into a large metal bowl
6. Second blend
Add 2 largest tomatoes, half the onion, and garlic to food processor
Blend until fully liquefied and emulsified
Pour into the same metal bowl
7. Third blend
Add remaining half onion to food processor
Pulse until diced
Add to the metal bowl
8. Texture blend
Add remaining 7 tomatoes to food processor
Pulse until slightly chunky
Add to the metal bowl
9. Finish
Lightly whisk everything together
