Cilantro Lime Chicken Chili

Recipe makes 6 servings

Ingredients:
2 lbs chicken breast
2 cups Swanson chicken bone broth
2 (15.5 oz) cans of white kidney beans, drained and rinsed
2 (4 oz) cans of diced green chilis
1 tbsp garlic, minced
1/2 red onion diced
1/2 cup celery, diced
2 jalapeños, diced
1 tbsp chili lime seasoning
1 tsp salt
1 tsp pepper
1 3/4th cup frozen corn
Cilantro to taste
Juice of 1 lime
Optional garnish: cilantro, sliced jalapeños, avocado, tortilla strips

Directions
1. Prepare Ingredients
• Put 2 lbs chicken breast into a crockpot.
• Add:
• 2 cups chicken bone broth
• 2 cans white kidney beans (drained & rinsed)
• 2 cans diced green chilis
• 1 tbsp minced garlic
• ½ diced red onion
• ½ cup diced celery
• 2 diced jalapeños
• 1 tbsp chili lime seasoning
• 2 tsp salt
• 1 tsp pepper
2. Cook
• Cover and cook on high for 4 hours.
3. Shred & Mash
• Remove chicken breasts and shred.
• Before returning the chicken, use a potato masher to smash about ⅓ of the beans in the crockpot for a creamy texture.
• Return shredded chicken to the crockpot.
4. Add Final Ingredients
• Stir in:
• 1¾ cups frozen corn
• Fresh cilantro
• Juice of 1 lime
• Cover and let sit for 15 minutes to allow the corn to warm.
5. Serve
• Serve immediately, or store in the fridge/freezer.

Optional Garnishes:
• Cilantro
• Sliced jalapeños
• Avocado
• Tortilla strips
