Simply Asia 514 🌶️🔥🍜🥡🥢Copycat (Roasted Chilli & Cashew Noodles)

INGREDIENTS
– 500g chicken, thinly sliced
– ⁠1 onion, cubed
– ⁠1 red pepper, cubed
– ⁠200g ramen noodles
– ⁠2 chillies, sliced
– ⁠2 heaped tsp garlic (1 for chicken, 1 for stir-fry)
– ⁠1 heaped tsp ginger & garlic (for chicken)
– ⁠60g cashew nutsHandful spring onions, chopped
– ⁠1 tsp MSG (optional)
– ⁠Salt to taste
– ⁠1½ tsp roasted chilli paste
– ⁠3 tsp sambal
– ⁠⅓ cup soy sauce
– ⁠½ cup pad thai sauce

Method:
1. Marinate the chicken with ginger & garlic and set aside.
2. Heat oil in a wok over medium-high heat and cook the chicken until almost done.
3.Add 1 tsp garlic and chilli, followed by the roasted chilli paste. Cook until the chicken is fully done, then season lightly with salt and remove from the wok.
4.Boil your ramen noodles according to package instructions, reserving some of the noodle water.
5.In the same wok, add more oil on high heat.
6.Add onions and red pepper, then the remaining garlic and sambal. Stir-fry quickly.
7.Add the cooked noodles along with a splash of reserved noodle water. Toss well.
8.Return the chicken to the wok.
9.Add soy sauce, pad thai sauce, and MSG. Mix everything together until well coated.
10.Stir in the cashew nuts and finish with spring onions.
