Creamy Coconut Chilli Oil Noodles



If you love cozy, comforting bowls of noodles with a little kick, you’re going to love these Creamy Coconut Chilli Oil Noodles! My dream is to open an Asian café one day, and I’m building the menu one dish at a time – with you right here ☺️

Ingredients:
Flour – 1/2 tbsps
1tsp -Oil
Butter – 1tbsp
Coconut Milk – 1/2 cup
Salt & Pepper to taste
Chilli flakes – 1 tsp
Cheese – 1/4th cup – mozarella & cheddar blend
2 tbsps chilli oil
Green Onion- whites – 2 stalks
Garlic- 3 cloves – diced

Green onions and sesame to garnish

Process:
•Boil the noodles in water for about 5-7 minutes until Al dante and chewy.Strain the noodles and rinse under cold water. Reserve some of the boiled noodles water for later
•In a heated pan add oil and chili flakes and give it a stir
•Add the chopped green onion whites and garlic to it and saute well
•Add in the flour and butter to form a roux and cook it well
•Add the chili oil and mix everything together
•Add the reserved water and let it simmer. Add the coconut milk, mix well and adjust the seasoning by adding salt
•Stir in the boil noodles and coat them well in the prepared sauce and let them soak well
•Transfer the noodles to a bowl and top it up with cheese. Cover and let the cheese melt in its own steam
•Remove the lid and garnish with green onions and sesame seeds
