Smashed Potato Protein Egg Bites
Ingredients (makes 12)

Potato Base
• 12 mini round potatoes
• Salt & pepper
• Garlic powder
• Paprika
• 5ml Oil

Egg Base
• 8 large eggs
• 1 cup cottage cheese
• Salt & pepper

Toppings
• 8 slices cooked bacon (chopped)
• Diced red capsicum
• Diced green onion
• 1 cup shredded parmesan (divided)

Macros (per bite)
189 calories
15g protein | 14g carbs | 8g fat

Bake potato base for 20min at 200 Celsius then back in the oven once you add your toppings for 15min at 200 Celsius to finish off or until golden top.

This is one of those recipes that sounds a bit weird but once you try it, it just makes sense @hunt4shredz

  1. So did this guy just use another dude's video, repeat everything he said almost word for word, made it himself, then just give it a thumbs up?….Shouldn't the guy who originally made the video get the like…I'll never understand the internet.

  3. PSA to all, please please don’t heat silicone above 200 degrees F, it starts to leach out into your food and is very dangerous, please stick to metal muffin tins

Again absolutely delicious….BUT again, & I'm not pointing this out to be a jerk, but merely because if just changing ONE step, you'll avoid the ONE toxic thing happening here….so, put pargement paper, or ready shaped muffin pargement cups meant for those molds, and voila…no micro plastic seep into that perfect mini dish. ❤❤❤

  5. After mashing the potatoes and adding the salt, add to peels of an onion before pouring your eggs/joghourt mixture, thank me later
