1. Fluffy Golden Puris
• Prep time: 15 mins | Cook time: 10 mins
• Ingredients: 2 cups Whole wheat flour (Atta), 1 tsp oil, a pinch of salt, water.
• Method:
1. Mix flour, salt, and oil. Gradually add water to knead a stiff dough.
2. Rest the dough for 15 minutes.
3. Divide into small balls and roll into 3-4 inch circles (don’t make them too thin!).
4. Heat oil in a deep pan. Fry until they puff up like golden balloons.
2. Spicy Dubki Wale Aloo (The Sabzi)
• Prep time: 10 mins | Cook time: 15 mins
• Ingredients: 4 boiled potatoes (crumbled by hand), 2 tomatoes (pureed), ginger-green chili paste, cumin seeds, hing (asafoetida), turmeric, red chili powder, coriander powder, and amchur (dried mango powder).
• Method:
1. Heat oil; add cumin and hing. Add the tomato puree and ginger-chili paste. Sauté until oil separates.
2. Add the dry spices and salt.
3. Toss in the crumbled potatoes and add 2 cups of water for a thin, gravy-like consistency.
4. Simmer for 10 minutes. Garnish with fresh coriander.
3. Cooling Boondi Raita
• Ingredients: 1 cup whisked yogurt, ½ cup salted boondi (fried chickpea pearls), roasted cumin powder, black salt, and chili powder.
• Method:
1. Whisk the yogurt until smooth.
2. Fold in the boondi.
3. Sprinkle the spices on top and chill before serving.
