I had the Polish , Chilli cheese dog with a ridiculous chili and the classic Chicago Dawg.
The dogs are steamed to retain the fat and the buns are steamed to give it soft warm texture. For the Polish they use a
Double smoked pork kielbasa topped with
Garlic and caramelized onions
Mustard and sport peppers and celery salt.
Chicago Dawgs are served on a
Steamed popy seed bun with mustard, neon relish, chopped onions, tomato wedges, kosher pickle, sport peppers and celery salt..they call this dragged through the garden. It’s such a great dawg! sweet, little spicy and tangy.
The chilli on the chilli Cheese dog is made with 3 different Mexican chillies and beef broth, topped with cheddar cheese and serrano sauce
