Onion Garlic Gajju (Rustic Chutney)
Ingredients
1 Onion
1 Whole Garlic (bulb)
4 Green Chillies
Fresh Coriander (a handful)
½ tsp Salt
1 tsp Chilli Powder
1 tsp Coriander Powder
Preparation
Grind the onion, garlic, green chillies, fresh coriander, salt, chilli powder, and coriander powder using a traditional stone grinder (or mixer) until you achieve a coarse, rustic texture.
Tempering
Oil
Jeera (Cumin Seeds)
Curry Leaves
Heat oil, add cumin seeds and curry leaves. Once aromatic, pour the tempering over the chutney and mix well.

Bachelor’s Chutney (Quick Tomato Chutney)
Ingredients
1 Tomato
1 Onion
4 Dry Red Chillies
1 Whole Garlic (bulb)
Salt (to taste)
Fresh Coriander (optional)
Preparation
Heat a little oil in a pan.
Sauté the onions and set aside.
In the same pan, lightly sauté the tomato, dry red chillies, and garlic separately.
Transfer everything to a stone grinder (or mixer), add salt and fresh coriander, and grind to a smooth or slightly coarse consistency.
