|| Ingredients ||

1.5 Cup Rice
1/2 Cup Chana Dal
1/4 Cup Moong Dal
1/4 Cup Udad Dal
1/4 Cup Toor Dal
1/4 Cup Masoor Dal
1 TSP Fenugreek Seeds
1/4 Cup Washed Poha
1/2 Cup Curd (optional)
2 Zucchini
1 TBSP Garlic Paste
1 TBSP Ginger Green Chilli Paste
2 TBSP Oil
1 TSP Turmeric Powder
Salt to Taste
1 TSP Asafoetida
1/2 Cup Coriander

|| Ingredients For Garlic Chutney ||

2 TBSP Gathiya
8 to 10 Cloves Garlic
1 TSP Jaggery
1/2 TBSP Oil
1 TSP Lemon Juice
2 TBSP Kashmiri Red Chilli Powder
1/4 Cup Water
Salt to Taste

|| Method ||

* Soak all the dals and rice together with a few fenugreek seeds for 5–6 hours.
* After soaking, coarsely grind the mixture.
* Transfer it to a bowl, cover, and keep it in a warm place overnight for fermentation.
* Once the batter is fermented, add shredded zucchini or squash.
* Mix in garlic paste, ginger–green chilli paste, turmeric powder, salt, a pinch of asafoetida (hing), and a little oil.
* Stir everything well until nicely combined.
* In a deep pot, boil water and place a greased plate inside for steaming.
* In another bowl, take 1 cup of the prepared batter, add ½ teaspoon ENO, and pour 2 tablespoons of water over it.
* Mix quickly and pour the batter into the greased plate.
* Sprinkle sesame seeds and Kashmiri red chilli powder on top.
* Cover and steam on medium–high heat for about 10 minutes or until fully cooked.
* Once done, brush the top with a little peanut oil for a glossy finish.
* Cut into pieces and serve hot with spicy garlic chutney on the side.
