Italian Foxtail Millet Stuffed Peppers (Vegan + Gluten-Free)
For the peppers
6–8 medium bell peppers
1–2 tbsp extra virgin olive oil
½ tsp salt
¼ tsp black pepper
For the roasted tomato sauce
1 tbsp olive oil
4–5 garlic cloves, chopped
2 cans fire-roasted diced tomatoes
½ tsp chili flakes
½ tsp dried oregano
½ tsp dried basil
¼ tsp fresh black pepper
½ tsp salt, or to taste
For the vegan cheesy topping
¼ cup almond flour
2 tbsp nutritional yeast flakes
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp salt, or to taste
For the filling
1 tbsp olive oil
1 onion, chopped
1–2 green chilies, chopped
2–4 garlic cloves, chopped
1 cup cremini mushrooms (or any mushrooms you like), chopped
½ cup bell peppers, any mix you like, chopped
1 tsp salt, or to taste
½ tsp fresh black pepper
1 tsp red chili flakes
½ tsp dried basil
1 cup cooked black lentils
1 cup reserved roasted tomato sauce
1 cup cooked Foxtail Millet
2 tbsp fresh basil, chopped
