Wendy’s does not use raw ground beef for chili. They save unsold grilled hamburger patties (not burnt), boil them in water the next day to remove grease, drain thoroughly, and chop finely with spatulas. This makes the meat tender and non-greasy.
Second fact is that spices are estimated as Wendy’s employees receive the spices already mixed, I did the best research to get the best approximation on each.

1. Meat prep (authentic method): Grill or brown the patties fully, then cool them. The next day or after cooling, put them in a pot, cover with water, bring to a boil, and simmer 10-20 minutes. Drain all water and grease thoroughly. Chop finely with a sturdy spatula or knife until crumbly but tender.
Simpler method: Brown 2 lbs ground beef in a large pot over medium-high heat, breaking it up. Drain excess fat well.
2. Add diced onion, celery, and green pepper to the pot with the meat. Cook 5-8 minutes until softened.
3. Stir in tomato sauce, crushed or stewed tomatoes with their juice, beans, and spices. Add 1 cup water or tomato juice if needed for consistency. Wendy’s chili is thick but not dry.
4. Bring to a boil, then reduce heat to low. Simmer covered for at least 45-60 minutes (longer is better, up to 2-3 hours), stirring occasionally. Taste and adjust salt and spices. It thickens as it simmers.
5. Serve with shredded cheddar, onions, or crackers!!

    Meat: 2 lbs ground beef (80/20). To copy Wendy's perfectly: grill or brown 2+ lbs burger patties, cool, boil in water 10-20 minutes, drain thoroughly, and chop finely.
    Tomato base: 1 (29 oz) can tomato sauce, 1 (29 oz) can stewed or crushed tomatoes, 1-2 cups tomato juice (optional but recommended).
    1 (15 oz) can dark red kidney beans drained and rinsed, 1 (15 oz) can pinto beans (drained/rinsed or with liquid).
    Vegetables (finely diced): 1 medium-large onion (1 to 1.5 cups), 1/2 to 3/4 cup celery, 1/4 to 1/2 cup green bell pepper. Optional: small amount green chilies or jalapeño.
    Spices: 1/4 cup chili powder, 1-2 tsp ground cumin, 1 to 1.5 tsp salt (to taste), 1 tsp black pepper, 1/2 to 1 tsp garlic powder. Optional: 1/2 tsp oregano, pinch of sugar, dash cayenne or Worcestershire.
