Craving that big, bold one-pot comfort without blowing your day off track? This is my take on jollof — a smoky, spiced chicken-and-rice number that eats like a warm hug and still sits neatly in your macros. Restaurant-style flavour, homemade honesty, all done in a single pan.
Chicken Jollof-Style Rice
Makes 4 servings of ~350g
405 kcal | 29g protein | 53g carbs | 9g fat per serving
INGREDIENTS
For the spice paste:
1 large red bell pepper, cut into large dice
1 large tomato, cut into large dice
1 onion, cut into large dice
6–8 garlic cloves, whole
4 dried red chillies, soaked in warm water 10 min then drained
Pinch of salt
A few sprays of oil
1 tsp lemon juice
2 tsp honey
1.5 tsp chilli flakes
1 tsp oregano (or Italian seasoning)
1 tsp peri peri seasoning (skip if you don’t have)
1/4 tsp turmeric powder
1 tsp coriander powder
½ tsp pepper powder
1 no-salt chicken stock cube
Salt, to taste
A little water, to blend
For the chicken:
500g boneless chicken thighs
A few sprays of oil
For the rice:
A few sprays of oil
1 onion, finely chopped
4–5 garlic cloves, finely chopped
1 tbsp tomato paste or 2 tbsp tomato puree
1 bay leaf
~2 cups hot water (approximate — check as it cooks)
1 cup basmati rice, washed and soaked 20–30 min then drained
Coriander leaves, chopped
Salt to taste
1 zero-salt chicken cube (optional)
METHOD
1. Make the base paste. Heat a few sprays of oil in a pan over medium. Add the bell pepper, tomato, onion, whole garlic and drained chillies with a pinch of salt. Cook 8–10 minutes until softened and browned at the edges, adding a splash of water midway so everything cooks through rather than catching. Cool slightly, then blend with the remaining spice paste ingredients and a splash of water until smooth.
2. Cook the chicken. Wipe the pan, add a few sprays of oil over medium-high. Spoon in about one-third of the paste, add the chicken thighs and turn to coat well. Cook 12–15 minutes, turning occasionally, until the chicken is cooked through and the coating is glossy, sticky and slightly fried at the edges. Remove and set aside.
3. Build the rice base. In the same pan, add a few more sprays of oil. Add the chopped onion and garlic and sauté 2–3 minutes until soft. Stir in the tomato paste and cook 1 minute, then add the remaining two-thirds of the paste and cook a further 5 minutes to deepen the flavour.
4. Cook the rice. Add the bay leaf, hot water and a little salt, and the stock cube if using. Stir in the rice. Bring to a gentle simmer, cover, and cook on low 15 minutes until the rice is tender and the liquid absorbed.
5. Finish. Place the chicken pieces back over the rice, sprinkle coriander leaves, cover and cook 2 minutes and serve hot.
Serve with a quick garlic yoghurt sauce — mix a little grated garlic, honey, salt and chilli powder into Greek yoghurt.
