  1. Soaking the skewers is something I've never heard before, but my mind just went "Ooooooh, that makes so much sense!".

  2. Halloumi is a semi-hard, brined cheese from Cyprus, traditionally made from sheep's and goat's milk, though cow's milk is common now. Its high melting point. Wow, taught an old dog a new trick.
