La Fleur Rouge is a French-Chinese restaurant in Brooklyn’s Park Slope neighborhood that blends classic French techniques with Chinese flavors in a contemporary, ingredient-driven menu. Their Spicy Wings are seasoned with Szechuan peppercorn and aromatic five-spice, then finished with a light touch of cilantro. The wings are savory, fragrant, and mildly spicy, with a subtle numbing sensation from the peppercorns that adds depth without overpowering the dish.

Chef Jianlong Zhao (also known as Chef Dragon) says: “Our Spicy Wings are designed to be flavorful rather than overwhelmingly hot. The Szechuan peppercorn brings a gentle numbing sensation, while the five-spice adds warmth and complexity. It is a balanced dish that keeps you coming back for another bite.”

At Kashi in Downtown Brooklyn, these wings are made with house spices, green chillies, and coconut ranch.

“Much of our menu celebrates traditional Northern Indian cooking, but dishes like these give us the opportunity to have a little fun with familiar favorites. We wanted to take classic hot wings and reinterpret them with Indian flavors. Our house spice blend and green chillies bring the heat and flavors we grew up with, while the coconut ranch cools everything down. It’s a playful and delicious dish and one of our most popular menu items,” said owner Sam Yadav.

At Momotaro Ramen & Izakaya in San Luis Obispo County on California’s Central Coast, Japanese style fried chicken wings, Sansho pepper tare, sesame seeds, black pepper, Kewpie Mayo.

Chef and co-owner, Mateo Rogers, Momotaro Ramen & Izakaya says: “These chicken wings are unapologetically Japanese. Twice fried, tossed in a Sansho pepper tare. The numbing power of the Sansho pepper really gives the Teba Karaage a completely different approach to wings. Japanese Sansho pepper brings a vibrant citrus aroma, combined with a somehow-mild, tingling heat that leaves a temporary numbing sensation on the tongue. But don’t worry about that tingling; it’s just your taste buds waking up.”

Fiery Ron’s Smoked Chicken Wings

Maison Dube

At Home Team BBQ, named for founder and pitmaster Aaron “Fiery Ron” Siegel, these are the wings Home Team has been making since it opened in West Ashley in 2006. While most kitchens pick one lane for wings (smoke or fry), Home Team does both. They’re smoked low and slow over red oak, then fried for a crackly finish, dry-rubbed with the house blend, and served with Alabama white sauce, the tangy, black-pepper-forward mayo-based sauce that cuts right through the smoke. For anyone chasing heat, there’s an optional housemade “Death Relish” on the side.

“There’s a really great balance to these wings. The smoke makes the meat incredibly tender, and then the flash fry turns the skin into glass. We hit them with a little more rub, and that’s it. The Alabama White Sauce is the traditional accompaniment to smoked chicken and we’ve served it with our wings since the day we developed them,” said Aaron Siegel, Founder + Pitmaster, Home Team BBQ.
