Depends on how hot you want them and if you have a color preference. I also wait until they turn red.

Red has better flavor, green is probably more closer to what you’re use to eating. Red jalapenos in the grocery store are not the same as ripping them to red on the vine.
Id say give it a go, I love them when the ripen to red, more of an earthier flavor with the heat.

Yeah I wait till mine are red or at least half red, so much better than the green ones from the store.

At the *very* least, wait until they’re a darker green with hopefully a little corking. The one at the bottom is almost there, the other ones are still too bright green for my taste. I like a mix of green and red personally.
