Fredericksburg favorite expands with new Gulf Coast seafood spot

A Gulf Coast-style seafood restaurant is headed to Fredericksburg, making it the latest in a growing wave of trendy eateries quietly transforming the Hill Country boomtown into one of the state’s top culinary powerhouses.

Gulf Ranch, inspired by the Texas coast, will feature fresh seafood (imported regularly to the landlocked Hill Country), unique botana platters, a variety of Texas beef, and grilled chicken.

It’s not the only new restaurant drawing buzz in Fredericksburg. The small winery town has been steadily gaining recognition as one of the country’s next top food destinations. Magazines like Food & Wine have repeatedly recognized the community as a top small U.S. city for food and drink, calling it the “next big thing.”

Recent openings worth checking out include a new barbecue spot, new wine and cocktails, and a brewery, according to Hill Country real estate agent Doug Siddens, who said in a recent social media post, “Fredericksburg keeps adding to itself faster than most people can keep track of.”

Owned by Jesse and Sarah Barter, founders of the popular family-owned Hill & Vine restaurant and beer venue, Gulf Ranch will connect a soon-to-be trio of food and drink spots: Gulf Ranch, Hill & Vine and Sunday Supply, a cozy coffee shop in downtown Fredericksburg.

Jesse Barter told MySA that the venue will feature a traditional limestone exterior and a warm, rustic vibe. The eatery will focus on filling the need for high-end seafood in Texas Wine Country.

“As a kid growing up on the coast, you know, my first love has always been fishing and being connected to the saltwater,” Barter said. “Sometimes when you get up to the Hill Country, it has its own magical components, but there was definitely a miss for fresh seafood.”

The 5,387-square-foot restaurant will begin construction on September 1, according to a regulatory filing. Work on the new development, priced at $100,001, is scheduled to wrap on July 1, 2027, though all Texas Department of Licensing and Regulation filings are subject to change without notice.
