OKLAHOMA CITY (KOKH) — The Oklahoma Department of Corrections announced that it is making a big change to the way incarcerated individuals are fed.
ODOC announced that it is improving daily meal service by gradually transitioning to a new food service provider, Aramark.
“We understand the importance of food in a correctional setting, and we knew we needed to improve. When we began talking about outsourcing our food service, it was important that we partnered with the best vendor for those in our care,” said ODOC Director Justin Farris. “We are excited that Aramark is making changes to our food service and is being well-received by our incarcerated population.”
Officials say the move will improve menu variety, nutrition, and consistency across correctional facilities.
“Fresh fruits and vegetables, less sodium and starch,” inmate Chris Haslacker said. “Overall, it’s been a whole lot better. I give it an 8.5 or 9 out of ten – definitely.”

The updated menu expands protein options to include more beef, chicken, and fish while offering more options to better meet individual preferences and nutritional needs.
“The temperature is hot when it’s served, which we are not used to,” inmate Wendy Hobb added. “Fresh vegetables, fruit – it’s amazing. The food has taste to it. They season it. You walk away full.”
The new program also provides accommodations for specialized dietary requirements like gluten-free, high-fiber, religious needs, and age-specific meals.
“Everyone is talking about the flavor,” inmate Marilee Smotherman said. “There are no more mushy noodles. We know the meat we are eating.”
Aramark currently provides food service for approximately 450 correctional facilities across the United States.
The remaining ODOC correctional facilities will transition to the new food service program gradually over the next few months.
