I apologize if this is the wrong place to post this. For years i have been thinking about one of the best dishes I ever had and just found out the restaurant has been closed a long time. They called it Carnitas a la Mexicana. All it said was pork tips in a spicy red sauce. Any ideas at all what the sauce could be? The restaurant was cuisine from Jalisco. It was tender and spicy and definitely had onions and peppers if some kind. Still chasing the high of eating this!

Looks similar to chile colorado
Anything “a la Mexicana” means it will be sauteed with seasoned onions, tomatoes and peppers (you have to use enough tomatoes to make a light sauce). This dish likely incorporated chunks of already-cooked “carnitas” with the veg. The seasoning can be anything from salt and garlic to a special mix they used at the restaurant. Good luck replicating the dish, shouldnt be too hard.
Is this at a restaurant? That is some horrible plating. Why are the tortillas just hanging out separate, to get cold and hard before you use them?
Carne Guisada is what it looks like to me. It crosses regional boundaries as well. You can find Mexican, Puerto Rican, and Tex Mex styles. I have made this version with no olives, add guajillo peppers for color:
