Crunchy, cheesy, and maybe just a little bit greasy, birria tacos – also called quesabirria tacos, are uniquely created and divinely satisfying.
These tacos are full of layers of flavor with a combination of textures.
First comes the Mexican birria stew, made traditionally with goat or lamb meat slowly simmered in a chili-based broth, giving it a reddish tint. Beef has also become a more common option recently.
The tender shredded meat is the central part of a birria taco, which can be very simply described as a street taco meets a quesadilla meets a French Dip sandwich.
Corn tortillas are dipped into the consommé, and filled with the meat, onions, cilantro, and a white cheese that becomes stretchy and melty once the tacos are grilled, similar to a quesadilla, to a very crispy golden brown.
Birria tacos are eaten by hand, served with a cup of the consommé for dunking the taco before every bite.
These tacos are so flavorful that you can save the salsa for your chips and so involved that I don’t recommend as your dish-of-choice if you’re on a job interview or a first date.
I tried birria tacos for the first time out of curiosity at Amigos 70th Street restaurant and I couldn’t believe my mouth.
