Gringo’s Tex-Mex Expanding to Kyle

According to public filings, Gringo’s Tex-Mex is expanding into the Austin-area market with plans for a new restaurant in Kyle. The Houston-based Tex-Mex restaurant chain is planning a ground-up, 9,500-square-foot location at 19831 IH 35.

A restaurant opening date has not yet been announced. What Now Austin reached out to representatives of Gringo’s Tex-Mex to inquire about the opening timeline but did not hear back prior to press time. Public filings list a February 2028 completion date. However, dates listed in public documents are not always definitive.

Gringo’s Tex-Mex was founded in Pearland in 1993 by Russell Ybarra. The company has since expanded throughout Texas, with locations currently listed in markets including Houston, Katy, Cypress, and several other cities.

The restaurant’s existing menu includes Tex-Mex staples such as fajitas, enchiladas, tacos, combination plates, quesadillas, and chile con queso. Its menu also includes seafood dishes, including shrimp and crawfish enchiladas, as well as a selection of margaritas and other cocktails.

The restaurant is planned as part of Kyle Park, a large mixed-use development along Interstate 35. The growing lineup adds to Kyle Park’s development as a retail and dining destination along the I-35 corridor.

What Now Austin also recently reported on Olive Garden‘s planned restaurant at 19865 IH 35, while LongHorn Steakhouse is planned at 19889 IH 35, immediately adjacent to the Olive Garden site.
