In this video, I break down the flavors from the other 4 gallons of the Russian Imperial Stout that I added various adjuncts to in secondary. I found a WIDE range of results came out of this but really enjoyed the experiment. It is 100% worth it in my opinion to throw random stuff into the secondary if you want to play around with flavors since this always produces more pronounced flavor than throwing the same ingredients into the boil. Of the four varieties of RIS, I liked the coffee stout the best, with full robust coffee flavor, unfortunately with no vanilla detected.Next up the “Mexican” style stout had tons of cinnamon and chocolate flavor but not detectable chili. Next the cherry stout was a bit overpowering, but still ok, and last the stout with scotch added was pretty terrible, never trying that one again! Overall though it was a lot of fun and very informative.
All ingredients steeped in fully fermented beer for 4-7 days
1 gallon “Mexican Style” Stout
-1 dried chipotle pepper
-1 tsp ground cinnamon
-2 oz cacao nibs
1 gallon Coffee Stout
-1 oz ground dark roast coffee
-1 vanilla bean
1 gallon “Scotch aged” Stout
-1/2 oz dark toast oak chips
-Splash of peaty scotch whisky
1 gallon Cherry Stout
-1 lb sour cherries
-1/2 oz dark toast oak chips
