Pati Jinich – Chile Relleno Rice with Salsa Roja

Pati makes a true Mexican homestyle food, Chile Relleno Rice or Chiles Clavados. The cheese stuffed inside the poblanos melts as they sit on top of the rice while it cooks, as the poblanos infuse their exuberance into the already fragrant rice.
