This is a quick vegetables curry served with a piece of blackened salmon or brown rice. It makes a perfect lunch or dinner on any day of the week just as is..For this recipe I used a premade curry that had I made a couple days earlier and froze, actually a good way to save time.
4 pieces Salmon ( about 6oz each )
Quick spice rub
salt and pepper
2 Tbs Vegetable oil
2 Medium carrots, peeled and diced
2 Small sweet potatoes, peeled and diced
1/2 White onion, peeled and diced large
2 Small Broccoli crowns/ heads, cut into bite size florets
1 Cup frozen corn
1 Large ripe tomato, seed and pulp separated and set a side
1Tbs Worcestershire sauce
1 Lemon, cut into quarters, to serve
1/2 c Cilantro , chopped, for cooking and garnish
Chili oil
reserved oil from salmon cooking
1/4 Tsp Red pepper flakes
1/2 Tsp Chili powder
Quick Spice Rub
1 Tsp Garam Masala
1Tsp Cumin
1/2 Tsp Chili powder
1/2 Tsp Turmeric
