What style of salsa should I make (test kitchen) next? Seeking ideas

There are a couple salsa that caught my eye I’m thinking of making next, just wanted to see what folks are interested in. Feel free to suggest additional ideas (except no fruity salsas, I don’t care for those).

  1. I’ve never had tamarind chipotle and it is extremely intriguing to me, so I’d vote for that one.

Colombian Aji Verde is an interesting one if you wanted different suggestions. i go to a local place that has it, its lots of cilantro and green onion with jalapenos, not super spicy, but super tasty(really good on empanadas).

From your list I’d personally pick the tamarind-chipotle one.

I had this super spicy yellow salsa that apparently was blended with some corn. Never remembered the name of the restaurant and I’m pissed because that was probably the best salsa I’ve ever had and I’ve had a lot of salsa.

It was light yellow, creamy like avocado, super spicy but not overpowering, spice that hit after the flavor which makes me think habanero. Can’t find anything online cause corn salsa is not what it sounds like ( damn Chipotle).

Best salsa I’ve had. A traditional, but not common, style. If you like grilled/smoky flavors, it’s amazeballs. (And not my recipe, given to me by the chef, more details on request if you want).
