
So the local taco shop has a salsa I absolutely love. I’ve asked the ingredients and they said it’s simply tomatoes, onion, cilantro, and jalapeños. I’ve tried my hand at it a few times and the consistency isn’t working. I’m starting to feel the tomatoes are coming from a canned source rather than fresh. Any recommendations on how to replicate in terms of tomato consistency??

Probably lots of salt too. And almost looks like canned “crushed” tomatoes
Restaurants almost always use canned whole tomatoes. Spice it up and make it your own! Use the canned tomatoes. Char some fresh jalapenos (or serranos if you want more spice). Use half an onion and quarter it and also char it a bit. Throw everything into the blender with a bit of freshly minced garlic and a handful of cilantro. A pinche pepper… I mean a pinch of pepper. Salt to taste. Et voila! It’ll be way better than the local taco shop. Adjust ingredient amounts to taste until you have the ratios exactly where you want them. 😁

Often the secret is…no onion. Like El Pollo Loco: tomatoes, salt, Jalapeño.
I see Mexican oregano in there.
Tip a cook on the side when it’s not busy. If it’s not the owner, they might let a secret or 2 slip.
All I see in your bowl are canned tomatoes, maybe roasted red chili or sweet pepper (the white inside shows unless that’s a small onion), and cilantro. Would you spread some out on a white background and add to this post?
