1 yellow onion

boil 3/4 onion, hab, fresnos till tender. Add to blender along with the 1/4 onion and a splash of the boiling liquid. Add spices/bullion. Blend till chunky, but somewhat smooth.

I’ll give one more secret.
– Take 2 corn tortillas, and cut them into triangles. Fry in 3-4tbsp of canola oil until crisp. put to the side.
– in the same pan (there should be a little bit of oil left) “fry” 1/4-1/2 cup of salsa. This takes 3ish minutes, you want it hot and bubbling and to slightly reduce, but stir to incorporate the little bit of oil.
– scramble 4 eggs, once close to done add 1/2 cup of cheddar cheese, fried corn tortillas, and the salsa and stir to combine while finishing the eggs.
– eat alone, but I prefer to put it into a flour tortilla for the best breakfast taco ever.
