After drawing inspiration from you all in this incredible sub over the years, I wanted to share my go to salsa that I make in an expression of gratitude to you all.
12 small-ish Roma tomatoes or canned roasted tomatoes equivalent
1 Serrano pepper
3 habanero
1 dried guajillo pepper
1 dried Arbol
6 cloves garlic
~ 1 cup of cilantro
Half white onion
Half red onion
2-3 small limes, juiced
Splash of champagne vinegar
1 tablespoon of roast chicken Better Than Bouillon
1/8 tsp ground cloves (a little goes a long way)
Salt to taste
Rehydrate guijillo and arbol with warm water until soft (remove seeds unless you want to up heat)
Roast tomatoes, peppers, onions until everything is charred, let cool, and add to food processor/blender
Add cilantro, garlic, lime, vinegar, bouillon, ground clove to food process or blender
Looks great. Great color on this. How’s the consistency?

I want to make this today. I’ve never heard of using boullion. Forgive a silly question, but are you adding a tbsp dry boullion, or is that tbsp after it’s been dissolved in water?

Damned interesting salsa, but if I make it again I will definitely swap out the cloves for an equal amount of cumin.

I made this today, added cumin instead of cloves and subbed jalapeno for the habanero since I’m a wuss. Delicious!!
