First time ever making salsa, first time ever using a molcajete. My life is changed.

  1. 4 vine tomatoes

    1/2 white onion

    8 cloves garlic

    1 tsp Mexican oregano

    1/2 tsp whole black peppercorn

    1/2 tsp coarse sea salt

    1/2 lime for juice

    1/4 cup fresh cilantro

    Seasonings are estimates, everything was to taste.

    Roast tomatoes, garlic, quartered onion, and peppercorn until nicely charred.

    Grind garlic w/skin, Mexican oregano, salt, and peppercorn together into paste, discarding any particularly troublesome garlic skins. It will look disgusting and inedible but it will smell like Heaven.

    Discard onion skin and butt if desired. Smash and mix onion into seasoned garlic paste. The onion will require some persuasion to be broken down. It will be somewhat of a twisting grinding motion to rip the petals apart and express their juice into the garlic paste.

    Smash and mix tomatoes into garlic and onion paste, discarding cores. The challenge here is just not making a mess. The tomatoes basically fall apart on their own. Add lime juice.

    Taste and adjust as necessary.

    Lightly combine chopped cilantro. Garnish and serve warm.

    It was to die for. The aroma it produced was unlike anything else in this world. Where has this been my whole life?

    I recently made my first salsa too! Never going back to premade salsa. I fermented a bunch of different peppers and tomatillo’s then just blended it. Freaking blown away at the flavors. Right after that I subscribed to this sub.
