    How do you dry them? Once I read you smoke it a little bit but no exact instructions how to dry pasilas.

    I love so many chiles! One of my favourite less-known chiles is the Costeno Amarillo, for its unique aroma and flavour. (Why no “enye” Reddit?)

    For spice, chiltepin, habanero and arbol, for flavor and more general use, guajillo.

    we have a sauce at work that is essentially guajillo x habanero and its a perfect hot sauce.

    For dried chiles I prefer Morita and Ancho, because those are the more flavorful plus Morita can be fucking hot af. For fresh I’ve always love Serrano and Habanero, pickled onions and habaneros are truly one of the most delicious things out there

    I used to go crazy over Oaxaca’s – then I found great moritas. Flavor is close enough and way less expensive.
