Longtime lurker and first time making smoked salsa this past weekend. This was one of my favorite things I have made on any of my smokers and I cant believe it took so long for me to try it… I sort of just took things id seen in a bunch of posts to create the following:
Saturday Salsa – 1 lb tomatillos – 4 medium beefsteak tomatoes – 2 white onion – 3 green onions – 2 bell peppers – 4 jalapeños – 2 habanero – 2 poblano – 2 serrano peppers – 1 bunch cilantro – 2 limes – 1 head garlic – salt to taste (prob 2 tsp) – 1 tsp pap
Cut Tomatillos, tomatoes, bell peppers, onions, japs, spicy peps, poblanos, serrano, garlic in half and put in smoker at 275 for 1 hour 15 minutes (skin side down)
Once complete take tomatillos and tomatoes and put in oven on broil for a few minutes then when completed remove skins
Take all ingredients send through a food processor (I just kept pulsing until it looked right) When completed add chopped cilantro, lime juice, salt

Looks good! I do a very similar one except I use smoked paprika and a tiny bit of cumin.
