Hand-cut pico de gallo to top some smoked pork and chicken with a bit of guac. Fed a crowd of 20!

    Pico de gallo
    15 Roma tomatoes
    1.5 large red onions
    1 bunch cilantro (coriander)
    1 green bell pepper (capsicum)
    2 jalapeños
    2 limes

    Method
    Slice off top of tomatoes and deseed then place on wire rack then move to paper towels to remove as much water as possible.

    Dice all ingredients in uniform cubes as small as possible using a sharp knife.

    Squeeze through juice of limes and stir gently with the finely sliced coriander.

    Season with kosher salt and fresh cracked pepper.

    Made enough for over 50 tacos!

    As a born and raised Mexican, I only beg two things of you.
    Don’t ever use coriander again in Pico de gallo, and don’t call guacamole “guac”
