    1 tomato

    3 dried guajillo chile peppers, seeded

    2 dried ancho chile peppers, seeded

    1 pineapple, sliced 3/4-inch thick

    ½ cup orange juice

    1 onion, quartered

    ¼ cup white vinegar

    2 chipotle peppers in adobo sauce

    1 tablespoon salt, or to taste

    2 cloves garlic, crushed

    3 cloves

    1 teaspoon cumin seeds

    1 teaspoon dried oregano

    2 pounds boneless pork loin, thinly sliced

    Cook all in water then blend together to marinate pork in. After some time, cook in pan.

    For salsa

    Tomato
    1/4 Onion
    Garlic clove
    Habanero or chilli arbol (3-4)
    Pineapple ( few little pieces )

    Cook in some oil in pan then blend with salt

  2. This looks so bomb, gonna have to try. I’ve never thought about incorporating the pineapple into the salsa on a Pastor taco instead of the chunks. Definitely a neat take. Thanks for the recipe too.

    Looks really great – though this really is meant to be roasted…the original was based on Lebanese immigrants’ shawarma. Get yourself a vertical spit and stack your pork then roast it. Better yet, if you have a smoker, stack it on the spit and then throw it on the smoker for a few hours – it will be the best al pastor you’ve ever had. You also get those great crispy bits when you carve it off the spit.
