This is my bar none favorite salsa in the WORLD. Local restaurant has it on menu. I’m friendly with the owner (he has 4 or 5 restaurants spread across the state), so I asked him what’s in it. He said something to the effect off “it’s got about 4 different types of peppers in it . Lots of fresh jalapeños, and these little peppers …I can’t remember the name.”. After that, we were interrupted . He has told me in the past it absolutely does not have tomatillos in it , which was my first guess based on the taste. A bit tangy . A pretty powerful spice level. Any help is greatly appreciated. Loads of respect for you all in advance , thank you ! Sorry for wall o text
-edit- it’s not on the menu , and I called it “the hot salsa “ for the longest time. I ask for the “salsa picosa”, per their instructions

Friendly enough to just seek the recipe for your own good or where it is sourced if they do not make in house?

Since you don’t seem about to suddenly move cities, this might not be immediately helpful, but I had a similar situation with a particularly good butter chicken recipe when I moved countries a while ago.
Basically, I found the restaurant’s email address and grovelled, explaining that we couldn’t find a decent one in Australia, and promising that I would never share the recipe with anyone.
I was very grateful when they sent it to me… Especially as, when we next visited the city, we discovered that they had closed and we were no longer able to eat there. 🙁
So, if you find yourself moving away, asking really nicely might work.
