    Same recipe for both, one used red tomatoes one used green.

    – about 5 beefsteak tomatoes worth
    – 1 head of garlic
    – 1 poblano
    – 2 serranos (could use more, was trying to keep it mild for my son)
    – 1/4 of a red onion
    – large handful of cliantro (maybe 1/3 of the bunch?)
    – 1/2 tsp? Of salt
    – 1/4 tsp? Black pepper

    Roasted everything (except cilantro) for about 25 minutes. Roasted the garlic about 20 mins more after that (45 min total). Throw everything in a food processor and let it go. 🙂

    How do you get the red salsa thick like that? With tomatillos mine are thick but the tomato based get watery and separate.

    Both salsas look delish! Thank you for sharing the recipe. I will try the red tomatoes because I don’t have any green tomatoes.

  5. Reminds of Saturdays me and my brother would watch college football and my mom would make salsas like this for us
