awhile ago i posted my work’s recipe for a chicken marinade asking how to make it a salsa. i took yalls advice and this is the result! it’s not perfect but it’s pretty good. recipe in comments.
let me start by saying, i have never made a recipe before and was mostly just spitballing, so apologies!
here goes:
8 roma tomatoes
1 medium yellow onion
1 7oz can chipotle in adobo
2 jalapeños, not seeded
1 lime
garlic powder
paprika
cilantro
chile powder
cumin
splash of chicken stock
first i charred the tomatoes and jalapeños in my cast iron, then added those and chopped onion, chipotle adobo and chicken stock to a blender, along with spices and lime juice to taste, and pulverized til they were a good and even consistency. then i stuck all that in my cast iron and let it simmer for about 45 minutes. here’s the result! it’s not exactly what i wanted, but for a haphazard salsa for a party tonight, i’m pretty happy with it!

I would add guajillo chiles, cumin, dried coriander, epazote en rama,, Mexican oregano, Mexican cinnamon, and a splash of cider vinegar at the end.
I posted a detailed recipe in here a few months ago that has been well received by real Mexicans.
