****Pineapple/Mango Fresca**** (all raw and hand chopped)
INGREDIENTS
5 ounces of pineapple
5 ounces of mango
2 Roma Tomatoes
Cilantro (or parsley or whatever)
Two tsp fresh lime juice
4 Jalapeño’s
1 Poblano
1/2 Sweet onion.
Salt to taste
INSTRUCTIONS
Dice the fruit to the size you want your consistency to be. Finely dice the peppers , Tomatoes and onion. Put in bowl and mix along with cilantro, lime juice and salt. Salt is a key to this recipe. It takes it from good, to great IMO.
IMO salt is a must. It makes a good fruit salsa great. At least with pineapple mango IMO.

I do this, and then mix it with some mayo and sour cream and shredded cabbage for an easy fish taco topping that’s basically a mango-pineapple-serrano slaw.
