Guajillo and arbol salsa

    12 dried guajillo
    1 cup dried arbol
    8 tomatillos
    8 cloves garlic
    2 red onions
    Salt, red wine vinegar, and cilantro to taste

    Fry the guajillo and arbols til they get deeper red (it happens fast—I ended up burning them). Remove them from the oil and pour boiling water over them. Let them sit in the water until they’re soft.

    Remove the chiles from the water and blend along with the tomatillos, garlic, and onions. Transfer the salsa to a pot, bring to a boil, and then simmer for 10 or so minutes. Addsalt, red wind vinegar, and cilantro to your liking!
