    2 cans of black beans, 1 can corn, 3 bell peppers (green, red, orange), 3 jalapeños, 1/2 bunch cilantro, 4 cloves garlic (1 tbsp), 2 limes (zested and juiced), 4 green onion stalks, 1 tsp tajin, 1 tbsp cumin, 2 tbsp smoked paprika, 1/8 cup distilled white wine vinegar, salt + black pepper to taste

    I make this for meal prep to use on salads. Grill some chicken thighs with fajita seasoning, few scoops of the salsa mix, one of those single serve guacamole and some ranch on salad

  3. Looks awesome! I make something similar that I put over rice and sauteed shrimp in garlic/lemon juice. Eat it like a burrito bowl. We call them Baja bowls. Saving this for sure!

    Made this tonight and it was a big hit. Thanks for the recipe. I’ll probably use the zest of just one of the limes next time and maybe scale back the black beans a bit. Oh, and I’m certain that picture was taken before you added 2 tablespoons of smoked paprika 😉.
