I’ve used pork rinds a few times. Gives me the crunch of the chip with a lot less carbs and I get to enjoy salsa when we make it.

We made “salsa salad” where we crushed chips in a bowl like this and ate it with a spoon. So good. Yours looks yum

I made a cucumber salad last night with tom, cucumber, red onion, basil, and balsamic. It just occurred to me it’s basically the same thing as pico with a couple ingredient swaps. But still follow tomato, onion, crunchy veggie, herb, acid.
Pico is now, in my mind, a salad and perfectly acceptable to eat with a fork/spoon.

Working away I buy a cooked chicken and a big bowl of pico. Fantastic combination but yeah I can just spoon pico solo is a wonder food.
